Sweet Soy Chicken and South African Peach Skewers

Serves 4


Ingredients

 

·       3 tbsp sweet soy sauce (ketjap manis)

·       1 tsp garlic paste

·       1 tsp ginger paste

·       1 tsp cumin seeds or ground cumin

·       1 tsp chili powder

·       1 tsp sesame oil

·       Juice ½ lemon

·       1 kg skinless, boneless chicken breasts or thighs, cut into pieces

·       3 ripe South African peaches, cut into pieces

·       1 large red onion, cut into chunks

·       Cooked basmati rice and salad, to serve

Method

 

1. Combine the sweet soy sauce, garlic paste, ginger paste, cumin, chilli powder, sesame oil and lemon juice in a bowl (not metal). Add the chicken pieces and toss together, then cover and refrigerate. Leave to marinate for several hours (overnight if possible).

 

2. When ready to cook, preheat the grill to medium-high.

 

3. Thread the chicken, peaches and onions onto skewers.

 

4. Grill for approximately 12-15 min, turning halfway through, and brushing with more marinade as they cook. Check that the chicken is thoroughly cooked (the juices should run clear).

 

5. Serve with basmati rice and salad.
