Good-for-you South African Peach Brulee

Juicy South African peaches taste so good in this super-simple dessert.

4 South African peaches or nectarines
6 digestive biscuits, crushed
4tbsp Marsala or sweet sherry
300g low fat Greek-style yogurt
150g low fat soft cheese
1tsp vanilla extract
4 heaped tsp demerara sugar

  1. Preheat the grill. Halve, pit and slice the peaches or nectarines.

  2. Share the digestive biscuit crumbs between 4 grill-proof serving dishes (or use one large dish). Sprinkle the Marsala or sherry over them, then share the peaches or nectarines between the dishes.

  3. Mix together the yogurt, soft cheese and vanilla extract. Dollop onto the fruit, then sprinkle the demerara sugar on top.

  4. Grill the desserts for 3-4 minutes, until the sugar melts and starts to brown. Cool for a few minutes, then serve.

Cook’s tips: You could use South African apricots instead of peaches or nectarines – you’ll need about 8 in total. If you’re making this for children, use unsweetened apple juice instead of Marsala or sherry.
