Hot South African Sunshine Dessert

Simple – and sensational! Sliced South African peaches or nectarines and plums are sizzled in a skillet, sprinkled with granola and whole almonds – then toasted! What could be nicer, served with clotted cream or ice cream and a drizzle of maple syrup?

 

Preparation: 15 minutes

Cooking: 6 minutes

Serves: 4

 

30g butter
4tbsp fruit and nut granola
40g whole almonds
3 South African peaches or nectarines, pitted and sliced
4 South African plums, halved and pitted
2tbsp light or dark muscovado sugar
Clotted cream, ice cream or crème fraiche, to serve
Maple syrup, for drizzling

Method

  1. Melt half the butter in a large frying pan and add the granola and almonds. Cook over a medium-high heat for 3-4 minutes, turning to toast the granola and nuts. Tip the mixture into a bowl and wipe the pan clean.

  2. Melt the remaining butter in the frying pan and add the South African peaches or nectarines and plums. Cook for 2-3 minutes, turning carefully.

  3. Sprinkle the sugar over the fruit and allow a few moments for it to melt, then scatter the granola and almonds on top. Serve with clotted cream, ice cream or crème fraiche and a drizzle of maple syrup.

    Cook’s tip:

    If you like, just use peaches, nectarines or plums, rather than a combination.
